Dry Cider

I generally drink my cider after three or four days of fermentation. It's very good, but sweeter than the excellent ciders I've drunk in the Asturias region of Spain. I'd like to make a drier cider, but not one with a much higher alcohol content. What steps should I take? Longer fermentation? Less s...

Okay, thanks for your help. Dried malt extract (DME) also makes great EZ Capped beer, but the hopped variety is nearly impossible to find (and not hopped enough), so the hops must be added as an additional step. Sorry to hear you're no longer offering these kits. I've been making great cider with your caps and want to move on to making some stouts and ales.
