75-85 degrees Fahrenheit

The manufacturers of yeast say 1 year, but many homebrewing
experts say it's actually several years. There have been documented cases
of various yeast-like life forms discovered in places like Antarctica that
have reactivated after 30,000 years of cold storage. The key is to keep
the yeast dry (keep the bottle closed) because refrigerators are high in
moisture content.
