The pressure is normal. It's just carbon dioxide gas which is a by-product of
fermentation (using EZ caps pretty will always make champagne). If you want to
remove the carbonation you need to use a regular air lock to allow the gas to
release without letting in outside air (cheap and available on-line or at any
homebrew store). Also refrigeration doesn't totally stop the fermentation, it
just slows it down to a crawl, of course that depends on whether or not there's
any sugar left as well. Hope that answers your question.
