I am new to e-z-caps too. I just have a batch that is only 3 days old. It
tastes good so far, but still tastes just like juice only.

Have you started yet?

Why would you want it to sit in a warm room for a month? I can't think of any
juice/wine that's good at room temp. especially a sparkling wine.
