You should use the e-z cap if you like your mead to be sparkling. If you like it
to be still (uncarbonated), then you just need to use a regular penny bubbler or
airlock that lets the CO2 out freely but keeps the nasties from getting in.

One question about your recipe: when you say "1/2 water", is that a half-cup? Or
some other measurement?
