I have also read many posts
where people freak out about
what to do with the yeast that
is present in the drink. My
god people!! Relax. Once your
drink is done fermenting place
in in the fridge. Once it is
at fridge temp bleed off the gas
completely. It will stir up the
bottom crud but don't worry. This
is just to get rid of excess gases
that formed while the drink was
still fermenting in the fridge
before it got cold. Now, leave
the drink in the fridge for 72hrs.
Clean yourself a new 2L bottle.
After 72 hrs. put the bottle in the
freezer for about 15 to 20 minutes.
This slows down the agressive bubbling
action when you open the bottle. Now
slowly bleed your bottle by gradually
opening and closing it. Once it is open
transfer slowly into your new 2L bottle.
Tilt both bottles at a extreme angle like
you would when pouring a bottle of bottled
condition Ale. If you do it right no liquid
will run down the side of either bottles.
I am getting good at this and only leave
a few ounces of wine with all the crud when
I am done. Now, put this bottle back in the
fridge for 10 days. After that you will have
a very clear wine. I have even transfered my
wine into smaller bottles after the first
transfer. This results is very clear wine with
only a fine layer of yeast on the bottom. At
any rate. Don't Panic!!! It's just yeast.
