Hey,
Just so you know the carbonation in e-z caps is normal. Its what
the caps are intended for. The caps allow a amount of carbonation
out of the bottle while allowing the correct perentage to remain to
make the perfect sparkling wine. The yeast that you are using with e-
z caps also creates a large amount of cabon dioxied(the carbonation
in the finished wine). This completely normal.
The reason why you add sugar to the mixture in the process of
making your home made wine with e-z caps is to provide the yeast
food. When the yeast consumes the sugar that you have added or the
natural sugars of the selected drinks, its by-products are carbon
dioxide and alcohol. The more sugar the more carbon dioxied and the
more alcohol. Not to fret though.
If you still want a high percentage of alcohol in your home made
wine without the carbontation there are a few ways of achiving
this....

1. When you have completed mixing your wine and are ready to let
fermentatino begin. Don't place a e-z cap on the bottle. In place of
that cover the top with a piece of plastic wrap(or a few pieces
depends on thickness of wrap). Then poke 3 or four holes with a pin.
After that place on a regular soda cap on the bottle that you have
also poked a few holes in. I find this method better then the one ez
aps instructions provide because of the added protection from
spillage the cap provides.

2.When your wine has fermented the desired time you want. Don't
shake it up canter your wine(Cantering is pouring the wine into a
larger vessle so as not to disturb the sediment in the bottem).
After cantering place your wine back into a appropriate bottle with
the e-z cap on and shake your bottle and slowly allow pressure out
as you would if you where attempting to make soda flat for a baby.

3. When your wine is done remove the ez cap and place in fridge
without a cover. After about 24 hour should be fairly flat. If not
flat enough see suggestion #2.
