ending fermentation by filtering yeast?

hi.
when the drink tastes good, why not pour through a coffee filter and then refrigerate?

You could but it's not necessary, but clarify first. This allows the yeast to settle, allowing for reuse for a couple times. After clarifying, strain through filter to remove large particles.

you will always have yeast on the bottom unless you rack and re-rack and re-re-rack and so on.

the big boys use force filtering and that's why you don't see it in their product
